Maine Lobster Meat
Here's how to thaw your lobster meat: Simply place your lobster meat into the refrigerator 24 hours before you want to enjoy your rolls.
Alternatively (if you'd like to make your rolls the same day of receipt), you can run cold water over the lobster meat for 30 minutes. Be sure the lobster meat is thoroughly thawed. Then, place lobster meat in a colander, and let sit for 30 minutes.
To cook the meat (Connecticut Style):
- Thaw lobster meat.
- Bring a skillet to medium heat and add butter.
- Saute the meat 30-60 seconds until warm, flipping as necessary.
- Enjoy!
Maine Lobster Tail
Prepping Your Tails:
- Thaw tails 12-24 hours in the fridge to avoid the meat sticking to the shell.
Steaming Your Tails:
- Bring a pot of water to a boil, ensuring there's about 2 inches of water.
- Place the lobster tails on a steamer rack or tray.
- Steam the tails for approximately 1 minute of cooking time per ounce (until it reaches an internal temperature of 145 degrees Fahrenheit).
- Once cooked, the lobster shell will be bright red, and the meat will turn opaque/white.
- Run the steamed tails briefly under cold water to stop the cooking process.
Butterfly Style:
- Position your lobster tail on a cutting board, with the meat side down and the shell side up. Make sure the tail fins are facing away from you.
- Using kitchen shears, carefully cut down the length of the shell, being cautious not to cut into the meat. Stop the cut just before reaching the base of the tail, near the fins.
- Gently separate the shell by holding each side and prying it apart, exposing the meat. Place your fingers underneath the meat and push it upward, positioning it on top of the shell.
- Clean the tail by rinsing it under cold water.
- Add your desired herbs and spices, and dress the tail with drawn butter.
- Place the prepared tails in an oven-safe skillet or baking sheet.
- Bake at 375 degrees Fahrenheit for 12-15 minutes or until the meat is no longer transparent and it reaches an internal temperature of 145 degrees Fahrenheit.
Grilling Instructions:
- Use a sharp knife to cut the tail in half lengthwise.
- Gently rinse the lobster tails under cool water and pat dry with a paper towel.
- Brush melted butter with your favorite herbs and spices over the tails.
- Set the tails flesh side down on the oiled cooking grates for 3 to 4 minutes.
- Turn the lobster tails over and cook for an additional 3 to 4 minutes or until the meat is no longer transparent.
- Brush the tails often with butter while cooking with the flesh side up.
- Remove the lobster tails from the grill and let them cool for a few minutes before serving.
- Serve the lobster tails with more drawn butter or a dipping sauce of your choice.
- Cook the lobster tails to an internal temperature of 145 degrees Fahrenheit or higher.
Maine Lobster Rolls
We believe each one-pound bag of lobster meat makes five perfect-sized lobster rolls, but we’ve included an extra bun and seasoned lemon butter packet if you’d prefer to make six smaller, but still amazing, lobster rolls!
To Prepare Your Bun:
- Empty both plain butter packets into a skillet and place on medium-high heat.
- Once your butter is melted and pan is hot, toast both sides of your buns until golden brown.
- Place your toasted and buttered buns on a plate
To Prepare Your Spicy Honey (skip this step if you ordered the Lemon Butter Kit):
- Allow the Spicy Honey packets to reach room temperature before use (in a crunch, warm for a few seconds in the microwave)
To Cook the Lobster Meat (Connecticut Style):
- Warm all your packets of seasoned lemon butter in a small bowl and set aside. Later, you can choose to pour each warm packet onto each roll individually or add to sautéed lobster.
- Bring a skillet to medium heat and sauté the lobster meat for 30 - 60 seconds until
warm, flipping as necessary. - Pour warm seasoned lemon butter into the pan with your lobster meat and stir together. Alternatively, you can choose to pour each warm packet onto each
prepared lobster roll individually.
To Assemble Your Lobster Rolls:
- Portion about 1/5 of the lobster meat for each roll, gently stuffing the meat into the bun.
- If you ordered the Spicy Honey Kit, use a small spoon to pour the Spicy Honey sauce over the lobster meat.
- Serve and Enjoy!

Preparing Steak:
- Preheat cast iron skillet or saute pan on med-high.
- Season steak with salt, and pepper.
- Add olive oil or butter to pan
- Place steak in the pan and cook for approximately 2.5 minutes on each side. This gives it a nice medium rare finish.
- By keeping the pan in the med high range, it will help create a great crust on the steak and promote the best flavor.
- Optionally toss some fresh rosemary or thyme in the pan with the butter or oil, and baste the steak (tilt the pan and scoop the butter/oil and spoon it on top of the steak while it cooks) this will also
create a deeper depth of flavor in your finished product
Raw/Marinated Shrimp
- Thaw the frozen bag of shrimp overnight in the refrigerator or under cold running water.
- Preheat saute pan to medium/high heat.
- Once hot, place shrimp in the pan (do not overcrowd the pan) and cook for 2-3 minutes until they start turning white on the bottom sides.
- Add 2-3 tbsp of oil or butter into pan, flip shrimp and swirl around to coat thoroughly.
- Turn down heat to medium, cover with a lid, and continue to cook for an additional 2 minutes until internal temperature is 145F.
Colossal Shrimp Roll Kit

- Turn down heat to medium, cover with a lid, and continue to cook for an additional 2 minutes until internal temperature is 145F.
To Assemble Your Shrimp Rolls:
- Portion 5-6 shrimp into the toasted bun.
- If you ordered the Spicy Honey Kit, use a small spoon to pour the Spicy Honey sauce over the snow crab meat or drizzle the lemon butter sauce.
